Loaded Sweet Potatoes
You’ll need: Sweet potatoes, butter (sliced), brown sugar, ground cinnamon, chopped pecans, mini marshmallows
Step 1: Preheat your oven to 400 degrees.
Step 2: Wrap the sweet potatoes in aluminum foil and place them onto a baking sheet.
Step 3: Bake the potatoes for 1 hour (or until soft when squeezed)
Step 4: Remove the sweet potatoes from the oven, leaving the oven on.
Step 5: Remove the foil from the potatoes and place them back onto the baking sheet. Then, slice the center of the potatoes and open the center by pressing on the sides.
Step 6: Stuff each potato with sliced butter, cinnamon, brown sugar, pecans, and marshmallows.
Step 7: After the potatoes are stuffed, place them back into the oven for a few minutes until the marshmallows are lightly browned. Dig in!
Sweet Potato Soup
You’ll need: 4 tablespoons of olive oil (divided), 2 tablespoons pf chicken or vegetable bouillon base, 1 tablespoon of maple syrup, 1 teaspoon of ground cinnamon, 1/4 teaspoon of cayenne pepper, 4 large carrots, 1 large onion (chopped), 2 cloves of garlic, 2 sweet potatoes (peeled and cut into small pieces), , 2 dried bay leaves, 2 slices of bread (torn into 1 inch pieces), a pinch of nutmeg.
Step 1: Heat 2 tablespoons of oil in a large pan over medium heat.
Step 2: Add the onion, finely chopped garlic, and carrots to the pot. Then, cook the veggies until until they begin to brown. (This should take about 10 minutes.) Once brown, add the spices and stir.
Step 3: Next, put the sweet potatoes, bay leaves, bouillon base, and six cups of water into the mixture and bring it to a boil.
Step 4: Reduce the heat and allow the mixture to simmer for 10-12 minutes. Set aside.
Step 5: Take a large skillet and heat 2 tablespoons of oil over medium heat.
Step 6: Add the bread to the skillet and cook until golden brown. Remove the bread from the heat and drizzle maple syrup on top. Set aside.
Step 7: Return the the veggies in the large pan. Remove the bay leaves and puree the remaining ingredients in a blender until smooth. (If using a standard blender, blend the ingredients in batches).
Step 8: Serve the heated soup with the maple croutons and enjoy!
Chocolate Eggnog Floats
You’ll need: Eggnog, chocolate ice cream, vanilla ice cream, whipped cream, chocolate syrup, chocolate chips
Step 1: Into a large glass, add 1 scoop of chocolate ice cream and 1 scoop of vanilla ice cream.
Step 2: Pour eggnog into the glass.
Step 3: Drizzle chocolate sauce on top of the float. Then, garnish with whipped cream and chocolate chips. Enjoy!
