It’s the perfect time to snuggle up and show your sweetheart how much you love them. What better way to do that than with a delicious, romantic dinner? Check out these tasty recipes and indulge in amazing flavors this month, right in the comfort of your home.
You’ll need: Bone-in or boneless ribeye steak, 1 teaspoons of extra-virgin olive oil, 3 tablespoons of butter, a few fresh sprigs of parsley, 2 peeled garlic cloves, wine, freshly ground back pepper and salt to taste
Step 1: Season one side of the steak with salt and pepper. Then, heat your cast iron skillet until it’s smoking hot.
Step 2: Add oil to coat the skillet. Then, place the steak into the skillet with the seasoned side down. While it’s cooking, season the other side. Flip the steak after cooking for 2 minutes.
Step 3: Add butter, parsley, and garlic to the pan and allow it to cook on this side for 2 minutes. Take a spoon and baste the steak with the melted butter.
Step 4: Continue basting the steak, but reduce the time to 30 seconds between each flip. Poke test the center of the steak to ensure that it is at your desired temperature. Then, turn off the heat, keeping the steak inside of the skillet.
Step 5: Baste the steak in the butter again and lightly cover the pan with foil. Allow it to rest for about 10 minutes.
Step 6: Once you’re ready to serve, remove the steak from the pan. Then, deglaze the skillet with a heavy dash of wine. Simmer the glaze for a few minutes. Then, add a tablespoon of butter and stir to thicken. Cover the steak with the sauce and serve.
Brown Butter Mashed Potatoes
You’ll need: 2 1/2 pounds of gold potatoes (chopped), 3/4 cup of buttermilk, 6 tablespoons of butter, fresh chives, salt and pepper to taste
Step 1: After cutting the potatoes, boil them in a large pot of salted water with the skin still on. Cook the potatoes for about 20 minutes until the potatoes are tender. Once drained and cooled, the skin should peel off cleanly.
Step 2: Begin preparing the brown butter by adding the butter to a sauce pan and placing it on medium heat. As the butter continues to cook, it will begin to brown. Be sure to whisk the butter as it melts. Once the butter is brown, remove it from the heat.
Step 3: Mash the potatoes with the buttermilk. Then, add in half of the browned butter. Add salt and pepper to taste.
Step 4: Place the mashed potatoes into a serving dish. Then, pour the remaining brown butter on top. Serve and enjoy.
You’ll need: 1 pound of mushrooms (cleaned), 1/4 cup of butter, 1 tablespoon of oil, 1 tablespoon of lemon juice, 2 cloves of garlic (chopped), 1 teaspoon of thyme (chopped), salt and pepper to taste
Step 1: Preheat your oven to 400 degrees.
Step 2: Toss the cleansed mushrooms in the oil. Then, season them with salt and pepper.
Step 3: Place the mushrooms onto a baking sheet, being sure that they are laid out in a single layer. Then, roast them in the oven for about 20 minute, or until they begin to caramelize.
Step 4: In a saucepan, cook the butter over medium heat, whisking continuously until it begins to brown. After it reaches a rich, hazelnut color, remove the butter from the heat. Mix in the thyme, garlic, and lemon juice.
Step 5: Toss the roasted mushrooms in the butter and season it with your desired amount of salt and pepper. Serve and enjoy.
