Pumpkin Gingerbread

Here’s what you’ll need:

1 cup of vegetable oil, 3 cups of sugar, 3 1/2 cups of all-purpose flour, 2/3 cups of water, 4 eggs, 1 (15 ounce) can of pumpkin puree, 2 teaspoons of ground ginger, 2 teaspoons of baking soda, 1/2 teaspoon of baking powder, 1 teaspoon of ground cinnamon, 1 teaspoon of ground allspice, 1 teaspoon of ground cloves, 1 1/2 teaspoons of salt

Step 1: Preheat your oven to 350 degrees.

Step 2: Lightly oil the interior of two loaf pans (about 9×5 inches).

Step 3: Take a large mixing bowl and combine the eggs, sugar, and oil. Beat them until they are smooth. Then, add water and mix until everything is well beaten and combined.

Step 4: Stir in the pumpkin, allspice, ginger, cinnamon, and clove.

Step 5: In a separate bowl, combine the baking soda, baking powder, flour, and salt. Once combined, add these ingredients to the pumpkin mixture and blend until everything is mixed well.

Step 6: Divide the batter between the two previously prepared pans.

Step 7: Bake the bread in the oven for about an hour (or until an inserted toothpick comes out clean).

1 1/2 cups of gingerbread or gingersnap cookie crumbs, 1/3 cup of milk chocolate, 3.5 oz of cream cheese (softened to room temperature), 3.5 oz of white chocolate chips, sprinkles

Step 1: Line a baking sheet with parchment paper. Set aside.

Step 2: Place the cookie crumbs into a blender or food processor until they become very fine.

Step 3: Add in the cream cheese and blend until the three are fully combined.

Step 4: Lightly melt the milk chocolate. Then, add it into the mixture and blend.

Step 5: Use a tablespoon to shape the dough into balls (about 1-inch in size). Place the balls onto the baking sheet and freeze for about 30 minutes.

Step 6: After the balls have set, start preparing the coating. Melt the white chocolate in a bowl. Then, stir it to ensure that there aren’t any clumps.

Step 7: Use a toothpick to dip each ball into the melted chocolate. After dipping, place each ball back onto the parchment paper and top it with sprinkles.

Step 8: Once all of the gingerbread balls have been coated and sprinkled, refrigerate them for about 15 minutes. Enjoy!
